Day One – 21 Day Fix

Today starts me back at day one of 21 days of focusing on the 21 day fix program.

I had to weigh in this morning and it was so bad even the scale didn’t want to record the number. No seriously. When I snapped the photo there WAS NO NUMBER!

I have gained back a whopping 25 pounds since I lost it all back in 2008. I guess that is a good thing. I had a long run before my body said “hold up, wait a minute” we are changing things here.

I don’t like this feeling and I don’t want to keep it. It is the most frustrating thing to know that you are not pigging out but cannot make any headway in the weight management game.

It SUCKS!

Today was fairly successful by all judgement accounts.

  • Breakfast: Chocolate/Vanilla Shakeology, 8 oz light almond milk, PB, spinach and a banana
  • I skipped morning snack because my breakfast was later than usual.
  • Lunch: Half chicken tortilla wrap, Black bean & steak soup
  • Dinner: Grilled chicken breast, asparagus, Half sweet potato.
  • Snack: Peanuts in orange container

I still have to complete my workout for the night and I am done for the day.

My short term goal is to make it each day without too much failure.

My long term goal is to see the shift in weight to where my cloths fit properly and the scale is not afraid to show my number.

Back at ONE

lose the weight

I feel like I start over more these days than I finish.

But I am starting over though right?! and not just throwing in the towel.

Well, here I am back at starting at day one.
I hope to use this blog as a diary of sorts.
Showing meals again.
Posting updates again.
Having fun again.

Meal Menu Monday

Last week was somewhat slow and fast all at the same time.

I had a lot of little things that took up a lot of little time.

I did manage to cook dinner and even spend time enjoying the nice weather this weekend.

I am realizing Sanford has more to offer than I expected. I had a great time Saturday afternoon at the food truck Bizarre. Great atmosphere and cute quant little bars downtown!

But it is back to a schedule and back to another work week and planning for success. I have to say getting back to a meal plan has me feeling organized and prepared!

This is what I plan for the week. I have a few new recipes that are new but look amazing. I cannot wait to make and try them. I will share when I do.

Monday: I have class, they are OTO

Tuesday: Taco Tuesday! Ground beef tacos

Wednesday: Buffalo Chicken Wraps with Roasted potatoes

Thursday: Zucchini, Mushroom and Chicken Rice Bowl (NEW)

Friday: Shrimp & Asparagus Stir-fry (NEW)

Saturday: Balsamic Caprice Chicken (NEW) with baked potato and salad

 

I hope I enjoy some amazing food this week!

Meal Planning – back at it for good.

It’s been a loooong time since I’ve posted any sort of meal plan.

I didn’t plan to stay away this long but recent events in my life have brought me back to what worked for so many years. I strayed. I like what I found but I also love what I had.

So we are going back to the beginning.  Back to the basics. Back to what had my mind and body happy. Meal planning and staying on target. I cannot exercise for 2 weeks so this is more important than ever to be on point. My week will look something like this….

Monday: Grilled Chicken, Best Brussels sprouts ever, baked potato, side salad

Tuesday: TACO TUESDAY🙂 ground beef corn tacos of course

Wednesday: Mini meatloaf, mashed potatoes (homemade), roasted brocoli

Thursday: I have a late class so they are OTO (on their own) with leftovers

Friday: Grilled shrimp kebab and rice pilaf

Saturday: Frito Pie  – low fat and yay to cooler weather!

 

I really hope to keep this habit going again. It helped me so much in the past and always kept me organized. I think I made things too complicated with complicated meals. Easy is always best.

I know it is Tuesday but yesterday was blog moving day – yay!! So far I am loving wordpress and the new layout. Maybe many new things to come in the future.

Chicken Queso Soup…..say whattt

I created a clean eating challenge on facebook and the ladies that are in the group have LOVED every single meal I’ve given them.
This was no exception!
If I had my choice I would eat a Mexican type food everyday but when I am planning food for other people, I have to cut back some.
I took a chance with this meal and it was a HIT!
I hope you enjoy this as much as we have =)

You will need:

1 pound boneless, skinless chicken breasts
3 cups salsa, divided
1½ cups water
1 teaspoon cumin
2 teaspoons chili powder
½ teaspoon salt
1 green peppers, chopped
16 oz frozen corn
1 jalapeno pepper, minced (without ribs and seeds)
1 14 ounce can black beans, rinsed and drained
4 ounces light cream cheese
6 ounces light Pepper Jack cheese (or cheese of choice)
cilantro for topping
Baked tortilla chips

Directions:

  1. Place the chicken breasts, 1½ cups salsa, 1 1/2 water, cumin, chili powder and salt in the crockpot. Cover and cook on high for 3-4 hours or low for 6-7 hours. When the chicken is done, shred the meat directly in the crockpot using two forks.
  2. Pat the minced peppers dry with a paper towel. Place the bell peppers in a large nonstick skillet over high heat without oil. Cook for 4-5 minutes WITHOUT stirring. This creates the browned, roasted look out on the outside of the peppers. Stir once and repeat until the peppers are nice and browned.
    Set aside. Repeat this process with the corn and jalapeño together.
  3. After the chicken has been shredded, add the roasted peppers, roasted corn and jalapeño, black beans, remaining salsa, and cream cheese to the crockpot. Stir and replace cover, allowing the cream cheese to melt. Adjust the consistency of the soup by adding another ½ cup of water if needed. Let the soup simmer for another 15-30 minutes until everything is smooth and melted. Just before serving, stir in the Pepper Jack cheese. Serves 8

I’ve made other Mexican soups and have a favorite already but this one here….. well lets just say I am lucky I pulled out a serving for lunch today! #noleftovers

Best Banana Pudding Ever!

I am still here yes, yes I know. It’s been what…. months I’d say.
I’ve had so much happen in my life that has set it upside down, turned it around and refocused me so much so that I have to work daily on being normal again. This is a discussion for another day so I will table it for now.
I haven’t had a postworthy recipe in a while but this weekend we had a birthday celebration in my house that was cause for something new.
I made a banana pudding that I’ve had the recipe for years for but never had a reason to make it until this weekend.
Everyone should have this in their life – just once! It is that good y’all!
Ok here is what you need.
Ingredients:

  • 2.5 cups of 2% milk
  • 1 lg box of vanilla instant pudding
  • 1 can of eagle brand condensed milk (or store brand)
  • 16 oz Coolwhip (I used Light)
  • 1 package Vanilla wafers
  • 4-5 ripe bananas

Instructions:

  1. Whisk or mix together the milk and vanilla pudding in a large bowl
  2. Add condensed milk and continue whisking.
  3. Add coolwhip and mix well
  4. Slice bananas to desired thickness.
  5. In a large dish, layer cookies, pudding mix and bananas.
  6. Continue layering until all done.
  7. Sprinkle top with crumbs of box for nice decorative topping.
  8. Refrigerate for at least 3 hours.

It makes A LOT.

Salted Caramel anyone?

Ok here we go!

Just 3 days into November……. so how about some Salted Caramel to go with this cooler weather!

I first tried a salted caramel mocha at Starbucks by accident and

fell. in. love!

I loved the sweet & salty combination.

I hated the calories it packed on.

What I don’t hate though is a Salted Caramel Shakeology!

Yeah!

You will need:

  • 1 scoop chocolate Shakeology
  • 1 cup non-fat milk,almond milk, soy milk or rice milk
  • 1 tsp. caramel extract
  • 1 dash sea salt
  • Ice to taste

Directions:

  1. Put all ingredients into a blender (any blender will do)
  2. Push the blend button
  3. Pour into a drinkable cup
  4. Insert straw
  5. Sip!

Gingerbread cookies–but better!

I always feel guilty eating ginger bread cookies because I eat the heads off first or maybe the arms. Then they are headless or armless little men. I feel bad for them, but then they are a cookie that is their duty in life – to get bitten. Ha!

But what if I could make a gingerbread cookie smoothie that didn’t involve eating a head or an arm? I would love that! No guilt on either part!

Well I will do just that. Tada! Gingerbread Man Shakeology!

Go forth and MAKE!

  • 1 Scoop Chocolate Shakeology
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground ginger
  • 1 tsp Vanilla Extract
  • 1/2 cup Almond Milk
  • 3/4 cup water
  • Ice

Directions:

  1. Add all ingredients to a blender.
  2. Blend
  3. Drink!

This is so good y’all! I wasn’t sure I’d like it because it has applesauce in it but I was so wrong! Not a big applesauce fan. It’s a texture thing.

I bet even better next time if I use applesauce with cinnamon in it that it would be killa illa illa!!

You need the following:

  • 1 scoop or packet of vanilla shakeology
  • 1/2 cup of almond milk ( I do use vanilla almond milk)
  • 1/2 cup of unsweet applesauce
  • 1/2 tsp of cinnamon

Ice

Directions:

  1. Put all ingredients into the blender.
  2. Blend well.
  3. Pour.
  4. Sip slowly thru a straw. Preferably your favorite straw!

Shakeology for Fall Y’all

In honor of the first official day of Fall how about we get things kicked off right!

You better believe it when I say –

Fall is my favorite time of year! The smells, the crisp air, the colors, the foods, the pies, the football ~ everything!

Since introducing shakeology to my nutrition, I’ve fallen more and more fond of it and I cannot wait to try some of these recipes for my favorite time of year! They have all the right ingredients to keep me away from the pie table but fill that craving! Plus I get the added bonus of doing something so nutritious for my body it’s got to be illegal! Shakeology alone is truly the superest superfood on the Planet by far! Is superest even a word?? Oh well…. it is today SmileSmile

Yep, everything from pumpkin pie to candy canes! Each week I will share my favorite finds. So to my current and future shakeology fans, I hope you fall in love with them just as much as I already have!

For all you (and me) everything Pumpkin lovers, lets start off with a Pumpkin Pie Shakeology. Now this one you can do with either Chocolate or Vanilla. Either flavor will work.

You will need the following:

  • 1/2 cup of Almond Milk (I looove Vanilla)
  • 1 Scoop or packet of Chocolate or Vanilla Shakeology
  • 1/2 cup canned pumpkin
  • 1 TSP cinnamon
  • 1 TSP pupmkin pie spice
  • 8 oz ice

Directions:

  1. Put all ingredients in the blender. (I have an old school blender so ANY blender will work, I promise)
  2. BLEND!
  3. DRINK!
